Boring Weekend Recap

source Monday, we meet again.  You come on like lightning you saucy wench.  I hope you all had a great weekend and managed to keep cool.  We got up to 96 at different times so that's...fun.     I have to start with these two cards I got in the mail Thursday night. The big paper one is from the friends we gifted our old grill to.  The Mr and I cracked up at the hot dog 'thanks' on what is an exact image of the grill along with a lovely note from the Mrs of the couple thanking us profusely as they didn't have money to replace their grill that was falling apart.  The other is from my friend I've known since 1988 and he doesn't send out cards much so this was a surprise.  It was him telling us how lucky he is to have us a friends and how much we mean to him and he thought we should know.  It made me cry for sure (and then of course check in to make sure he was okay.  He is.)  Obviously any kind of communication is appreciated but t...

Mini Guava Macadamia Nut Sweet Rolls

I am feeling tropical and I've had a version of these brewing in my head for almost a year.  Like how I don't procrastinate?  I wanted to whip this up as a Mothers Day idea and I was running out of time so I did this "cheat" version which would be perfect for the kiddies to make for mama since it's super easy!  (aka- Pin this bad boy under "Mothers Day ideas" and leave your browser or phone open for your kids to see.)




These are little bites of heaven.  They're not necessarily low cal but you lighten up where ya can and sharing is fun...well, a few.

Mini Guava Mac Nut Sweet Rolls
(Makes 11)

1 roll Reduced Fat Crescent Rolls
1 tbsp Trader Joe's Balade Light Butter
1/4 cup brown sugar
1/4 cup dry roasted macadamia nut pieces
1/4 cup powdered sugar
2 tbsp Maaza Guava juice

Free your crescent rolls from their can.  Spray a cutting board with cooking spray.


Unroll the crescents and crimp together the edges to make one large sheet.


Melt the tablespoon of butter and brush onto the crescent sheet.


Ready your brown sugar.  Take about 1 tbsp and sprinkle it over the pan you're going to use.  (These were going to the co-workers so tin pan it was.)  Sprinkle the rest over the crescent roll sheet.


Get your macadamia nuts.  Use 2/3 of the nuts to sprinkle over the crescent sheet then start rolling the sheet up tightly.


Take your messy edge and pinch them together.  You can even dab your finger in water and run it over the seam to make it more flat if you're a perfectionist like that.  Spray the top of the roll, cover with plastic wrap and refrigerate.  Preheat oven to 375.


Cut into 11 slices (that number makes them the most even but choose what number you like)


Mmm, hello goodness!  Spray your pan with cooking spray over the brown sugar you sprinkled down.  Arrange in a circle with each roll slightly touching

Bake for 13 minutes or until browned to your liking.  Immediately flip them out onto a plate by putting the plate on top of the pan and 1-2-3, FLIP!


This allows some of the goo that's formed while baking to seep back down into the rolls.  Yes please.

Mix your powdered sugar and guava juice together until you have a glaze to your preferred consistency and brush on when the rolls are warm and again when lukewarm.  Sprinkle with remaining macadamia nuts.

I hope your mama enjoys these or if you're a pet mom, time to get the hubby to get in the kitchen.  Oh heck, you don't need an excuse to make them...go nuts.

  1. These sound so good--may go to the store today and get the ingredients and make them. It makes me mad they don't make the low fat crescent rolls in the "recipe" version, that is the flat sheet. WHY NOT??? Pillsbury--Get with it please! Hope you're having fun in the land of the Macadamia Nut!!!
