Good Friday to you!  Literally.  I can't believe Easter is here.  Anyone else having epic wind and rain storms over the past month?  I mean good friggin' luck trying to enjoy any time out there and we're not afraid of weather.  As I type, there are 40mph gusts.  I went out to paint the critter cages on the planters and feel like I have hypothermia at 47 degrees when yesterday's weather forecast said it would be 74 today.  Da fuq?  Guess who finally took the bedroom Christmas tree down Wednesday?  It was neutrally decorated so it was fine but it came on every night and gave a cozy glow.  I knew one day I would look at it and know it needed to go to sleep until November 1st.  That's the other thing, I will be decorating for everything extra early from now on.  August 1st- Fall decor as I will thoroughly be over summer by then and given that's the day Mom passed, I'll need something to lift my spirits.  November 1st it'll be ...

Huevos Rancheros

You guys!  I have some incredible news to share.  Do you want to know how to get your spouse to clean the kitchen for you in 6 minutes with gleaming counter tops to boot?  Make this recipe!  Seriously.  I came down and said "oh, I was going to make you huevos rancheros but I need to take pics and the kitchen is a mess."  He rocketed off the couch, switched dishes and wiped down the counters and stove in 6 minutes flat!  Now that's what I'm talkin' about!

When we went to Napa for the first time, the Mr decided it was high time he try huevos rancheros.  He loved it.  So the first time I made it for him, he loved it and this is version #2 which I subbed black beans for hummus and added avocado.   Here's what you'll need for one serving.


2 small corn tortillas
2 large eggs
1/2 small avocado
1/4 cup cooked black beans (from dry, not canned)
1 strip bacon (I use nitrate free 40% less fat)
1/4 cup pepper jack cheese
1/4 cup salsa
1 green onion, chopped
3 small peppers (I used thai chiles)

Fry the bacon and put it to the side.  Keep the little bit of leftover oil in the pan.


Get your peppers, seed them, cut them into strips and fry them a little to make them soft and flavor the oil with some heat.


Cut up your strip of bacon into small pieces.


Put your tortillas into the oiled skillet over medium heat.


In another skillet, crack two eggs over medium low heat, add 1 tbsp of water and cover while you tend to your other ingredients.


Get a serving spoon and gently loosen the avocado from its skin.  Remove the pit and cut into slices.


Flip over the tortillas.  This is about how brown you want them to look.


 Then it's time to layer!

Add your tortillas to a plate.


Add your avocado slices.


Sprinkle on half of your black beans.


A tablespoon of salsa to each tortilla.


Add your eggs on top.


Top with remaining salsa and black beans.


Add pepper jack cheese.


Garnish with green onion, bacon and peppers!


It looks like a heapin' mess but if you like Mexican food and would like a good, hearty breakfast to start your day, this is it.  It clocks in around 650 calories but is full of protein and good fats.

  1. That looks really good. I'd have to scramble the eggs because I don't like runny yolks, but it would be just as good that way.

  3. That looks so good!! I will definitely need to try making it!! I haven't used dried beans before, do you just soak and boil them? They're so much more economical than canned so I really should try them.
