Family Time Weekend Recap

Happy Monday all!  I hope y'all aren't melting in the heat because it is MISERABLE!  Today we are going to apparently break records from the heat and be at 100 with heat index way higher.  Yay.  This will be me for the next week: source We went to my second cousin's graduation party.  I purposely wanted to arrive about 45 minutes later than the start time.  You don't want to get wrangled into setting up, babysitting, etc and that happened to people arriving earlier from what I heard so smart call on my part.  Also everyone is always chit chatting and we knew if there would be food it would be about the time they'd be eating...right again.  We already ate so we were good to go and then shocked the sh*t out my family when we walked in.  Final goal:  ✔ The grad immediately popped up and came over to hug us and be a good hostess which was so cute.  She's always been a very sweet kid but also a little badass.  She was the only wrest...

Chipotle Egg Salad

In my quest to get the Mr's protein up to par, I made a dish that is easy to make and big on flavor.  He seriously flipped for this and is awaiting my next batch.


Traditional egg salad uses mayo and I like mine that way too but I wondered how hummus would taste as the binder.  In addition to more flavor and less sodium, you get more product for the same calories.  Yes please!

Chipotle Egg Salad
Makes 3 servings

6 eggs
2 tbsp red pepper hummus
1 serving La Costena Chipotle Peppers and 1 1/2 tbsp of the adobo sauce

So I started with cold water, brought the eggs to a boil then turned them off...


...and totally forgot about them for two hours.  Amateur.

So what should've been gleaming, perfectly peeled hard boiled eggs looked like birds had pecked them.


Yes, I know all the tricks and the vinegar and all that jazz but in the end it doesn't matter because it's all getting hacked up anyway so vanity went out the door.

I opened a can of La Costena Chipotles in adobo sauce.


I grabbed my red pepper hummus. (Sabra has the same nutritional info if you have that in your area)


I got to hackin' the eggs.


I seeded and diced two large peppers.


I added the peppers, 1 1/2 tbsp of the adobo sauce and 2 tbsp. of the hummus.


Give it a goodly stir until combined.


Wrap it in a lettuce cup, top your favorite salad, melt a thin slice of cheese over it on a slice of sprouted bread or whatever your little heart desires!

  1. This is awesome in with my salad. Love the fact that you used hummus in it instead of mayo. As much as I love mayo (Miracle Whip light) I know I need to use it sparingly so this was a great mix and I am looking forward to the next batch :-)

    1. I'll get on it! I wasn't sure how you'd like it given your indifference on the peppers in other things but when you said you were looking forward to it on day 3, I knew I had a hit! :)

  3. Look yummy! I could definitely give this a shot. Not sure hubby would go for it, I've tried subbing out mayo in other recipes and he's not a fan, and kiddo isn't a fan of spicy in general - but I could totally do this for my own lunches.

  4. Wow. Adding hummus sounds truly inspired. As much as I love mayo I'm not a fan of cooked eggs but I think the texture of eggs and hummus would be really good together, especially my grainer homemade hummus. I'm going to have to try this one soon. Thanks!

    1. It was! My honey inspired me to try something a little different to get that protein up there as much as possible. I guess I'll have to be buying more eggs at the store at our usual run! :-)
