What I'm Reading This Week #25

Hello and happy Friday from the land of the scorching sun.  We are in for absolute Hades conditions the next few days, right on cue for the summer solstice.  You know I'm not happy about that. 😒 Thankfully, my other 50% shade cloth just arrived and is airing out so they can go on in the afternoons.  I have stuff in the big planters that are not fans of scorching heat so I need to be as on it as possible if I don't want it to go to poop for other reasons to add to the current reasons.  (Rain, pests, etc) I'm tryin' y'all!  I just got my little lint rollers to roll aphids/larvae off instead of wasting shipping tape.  I swear to you I have not seen ONE BEE since everything went in.  There was this chubby bumble bee that would hang out when our lilac was in bloom and just zone out levitating so I thought for sure she would be here for it all.  Nope.  The second it bloomed, it was gone.  I haven't seen honeybees at all.  I've checked ...

S'more Brownie Bites



I love me some s'mores.  I love me some brownies too.  You mix the two together and you've got some pretty good eats!  Since nothing ever tastes as good as the first bite or two, you can easily get the satisfaction of a decadent s'more without breaking the calorie bank.


Here's what you'll need

S'more Brownie Bites
(Makes 48)

1 box Ghirardelli's Double Chocolate Brownie Mix (I don't skimp yo)
1 egg
2 1/4 tbsp Natural Blend Canola/Vegetable Oil
3 tbsp unsweetened applesauce
9 sheets lowfat graham crackers
1/2 stick of butter
96 mini marshmallows

Mix up your brownie mix with the egg and water called for on the box and applesauce and oil ratio.  (Trust me, if you use all applesauce, it'll be too dry.  But this ratio is perfect for moistness and cutting back some fat/calories)  Set the mix aside.


Grind up your graham crackers in a food processor or blender into fine crumbs.


Melt your butter in a microwave safe dish.


Add it to the graham cracker crumbs.


Mix them up until they're moist.  (They shouldn't be wet)


Spray some cooking spray into a mini cupcake tin.


Using a teaspoon, measure out the graham crackers and place them in each cupcake tin.


Press them down like a pie crust in each tin.


Using a small tablespoon cookie scoop, scoop the brownie batter into each tin.


Try not to slam your face into the tin and lick out each brownie batter hole of goodness.


Bake at 350 for 23-25 minutes or until toothpick inserted comes out clean.


Let them cool for a minute or two then cover with a sheet of wax paper.


Place a cutting board over the top of the wax paper.


Flip it over and give it a little slam tap or two and hope for the best.


Okay, that's not the best...


Have a cheese spreader or butter knife close by to gently wiggle out any stubborn ones.


Top with 2 mini marshmallows each and if you wanted to get extra fancy, you could totally use a lighter or match and torch the top of the mallows.  No roasting required!

  2. Luckily for me, I'm picky about my sweets...always was. But THESE are definitely getting a try, just as soon as I equip myself with a mini-muffin tin. Perfect size and calories for my nightly treat!

  3. Sounds delish--as do all the Halloween treats so far! Thanks for sharing these great recipes. I laughed when you said, "Try not to slam your face into the tin and lick out each brownie batter hole of goodness." That is exactly what I do with the little individual containers I found of fat-free caramel dipping sauce. I cut up an apple and dip it into that delicious stuff, then when the apple slices are all gone, I stick my tongue into that container and lick up every drop of that caramel! I shouldn't do it--when I bought the caramel in those individual containers, I checked for calories, and there's 150 calories per container. OUCH! Plus the 100-calorie apple makes a 250 calorie snack. Too many calories--but so delicious! Oh--I also buy the fat-free caramel in a bigger container, but when I saw these little individual ones in the non-fat variety, I couldn't resist! While I'm still working, it's just so much easier to grab one of those pre-measured self-contained containers, then measure out 2 tablespoons of it, and put it into a little container to take with me, especially when I'm running late in the morning. I'm lazy that way. When I retire in 40 days (YES--only 40 more working days!), I won't splurge on those little containers anymore--they cost so much more! My thought was to use only HALF of one of the 150-calorie containers per apple, cutting the calories in half, but so far I haven't been able to do that!

  4. I love the photo with the brownie on the thingie. (That's what it's called, right? A thingie?) Brownies are totally my weakness, so these look awesome to me! :D

  5. I'm all for cutting steps if I can, don't think I'll be skipping the lighter to the marshmallow step though :). These look AWESOME. I just bought a box of crumbs for another project, so all I have to do is try to figure how much crumbs equals nine sheets, was wondering how I'd use the rest of the box :). Oh my goodness looks so yummy!!
