What I'm Reading (and Eating) This Week #38

I hope you've had a lovely week and are ready to do something fun this weekend.  This week is always a reflective one as it was the 16th year since the Mr's dad passed and the 13th year since our dog passed.  My sister in law was in the hospital for a health issue but that thankfully turned out okay.  She's in another state so all we could really do was send our good thoughts.

This week we continued with some good dinners.  Sunday was the Beyond Burger and potato wedges I showed earlier in the week after a good amount of gardening was done that afternoon.

Monday was Lemon Ricotta Ravioli with Roasted Red Pepper and Zucchini.



It was quite good and we'll definitely be picking that ravioli up at TJ's again in a future run.

Tuesday was Firecracker Meatballs, green beans and brown rice.




The Mr really enjoyed this one.  I did too.  Next time I will add another teaspoon of Sriracha because it wasn't too firecrackery for my liking.

Wednesday was an old standby of Orange Roughy with Apricot Jam, Sweet Potato Gnocchi and asparagus.



Always a winner but with eating slower it held us much longer as fish night usually had us hungry an hour later.

Thursday was Autumn Flatbread with sweet potato, caramelized onion, granny smith apple slices and extra sharp cheddar.




This was a great way to end that day since cooler air is settling in and I am ready for all of the Fall inspired foods!

How To Clean a Washing Machine  (I'm going to add the baking soda/toothbrush part but honestly, if you let 1 cup of white vinegar sit in the machine for 24 hours then run it on sanitary or tub clean, it gets the same results.)





This Family’s DIY Contactless Candy Slide Just Won Halloween  (Looks easy to make if your town is still doing trick or treat this year.  If we got ANY over the past 20 years, I'd do it but we haven't so I won't.  *Sigh of relief from the Mr.*)

I do want to make it a good weekend going into next week.  Tuesday I'm finally going to the gynie after pushing it back from July.  I'm considering putting a mask on my hoo ha as a joke but I don't know her well enough to know if she'd laugh or tell me not to come back next year.  My old gynie would've howled.  That evening, the Mr was supposed to be getting an MRA up the street to see what is up with his heart.  They already did an ultrasound and it showed movement but also said it was basically a crappy picture and research showed it was an "inferior" means of diagnosis.  He had a welt from how hard the wench pushed on his chest during the test so not sure how much we trust it yet.  Well, they called and said the place they were going to send him doesn't do that test and now he has to wait until November.  We've been fighting for a damn MRI for over a year and it's so ridiculous it takes a shitty picture and wasted money (AGAIN) to get it.  Effing insurance company can bite it.  Any good vibes you could throw out there for good results for him would be much appreciated.

  1. I remember getting an MRI like it was nothing when I had a leg issue about 15 years ago. Now insurance acts like it is the absolute most expensive procedure you can ask for now or something. I don't get it. It's getting to the point where it'd be cheaper for us to buy our own machines collectively as consumers and use them ourselves, like a timeshare for medical equipment. Okay, bad idea. Have a great weekend everyone!

  2. That totally sucks about the MRI!! They make patients do so much hoop-jumping, then will have the nerve to say that it took you too long to get this very important test done, having absolutely no concept of the stress you're under to actually get the thing done-- and done correctly! It's maddening. I hope the Mr. has very good results when they do come in so you guys can not having that hanging over your heads.

    Usual stuff this weekend between house stuff and working. The hubs will be calling on a window tint guy for his car as a birthday gift from me, so I know he'll be excited about that. I'm making banana bread and soup for some fall weather goodness. And I got my "warm bread" candles that I absolutely love! The whole house smells like a bakery of ever-loving bread baking for hours. So soothing. Enjoy your weekend with some nice fall weather...woohoo!!!
