Low Key Easter Weekend Recap

Y'all it almost happened.  It seemed like it was almost a perfect carpet install.  Then the dude grabbed a broom and swept all of the carpet on top, swept the floor, then swept the stairs going downstairs.  Thanks for taking our clean carpet and giving it a fresh layer of unknown dust and dirt all over it.  Then we looked when they left and saw a gap by the baseboard on the landing we weren't happy with and I know they had to have seen it so I fear shoe molding is in our future which we hate.  The final "of course?"  We had a TON left.  Like enough to recarpet another set of stairs easily.  Uh, why are you sending someone out to measure to give us a quote and we have enough left over to carpet another set of stairs and have enough of another piece for a big strip in front of the washer and dryer.  This goes well beyond the "10% waste" they have you get.   (It stretches 2/3 the length of our basement) So begins the process of trying...

Quick Hawaiian Spinach Salad

I don't know about calling this an official 'recipe' but I have to say it's one of our favorite go to meals since January and I thought maybe y'all would like it too!

The main ingredient is the Hawaiian Chicken from Aldi.  I almost cringe putting it there because they, like their sister company, Trader Joe's something pull stuff out of rotation seasonally.  So if you're lucky enough to have one near you and it's in stock, grab it!

Here's how I put our salad together.


1 package Park Street Deli Hawaiian Style Chicken  
1 bag spinach
Fresh pineapple, cubed
Veggies of your choice
20g Mac nuts

We have these HUGE bowls from Pottery Barn that are made for obscene salads.  (Similar to these.)  I usually put 2 1/2 cups of spinach in each bowl as the chicken heats in the microwave for 3 minutes then cut up 1/2 a zucchini, pineapple, about 2 oz of red cabbage, red/yellow or orange pepper and because I'm lazy, shredded carrots.  (It's better if you cut all of that stuff the day before so you can truly make this a 5 minute dinner though!)

When the chicken is done, I pull that and the pineapple in there with it and measure it out on a food scale.  (Usually 4-5 oz each.)  I spoon the teriyaki glaze over the spinach and give it a toss with tongs to coat and to use as dressing.

I add the veggies on top, cut chicken strips in the middle, 2 oz of pineapple around that and 10g of mac nuts each.

It is filling and as someone who has been to Hawaii 14x, I can tell you it tastes as close to the islands as you're going to get on the mainland.  

Because the nutritional info is variable based on what you use, I'll tell you that our typical salad using the above comes out as follows:

Calories 500
Carbs 62g 
Fat 13g
Sat Fat 3g
Sodium 1240mg
Protein 32g
Fiber 7g

As always, it's an estimate.  I always have to watch my sodium while meal planning if we're having this but worth it!

  1. This is sooo good and surprisingly filling. I love having it in our rotation. Last time I went to Aldi I got the last one and realized how much I was looking forward to it!

  2. I bet people would really find this delicious! The ingredient list is nice and small and everything is easy to get at the store (so long as it's in stock as you said), and it's a go for any time of year. Glad you found one that hits that yummy spot and can go into your rotation often!
