Halfway Through September Weekend Recap

Howdy-eth Do-eth?  Anyone else in the 90's today and the rest of this week?  🤬  It's like summer is getting out its last wrath or something.  Not to say when the calendar flips to 'official' Fall that it will suddenly drop in temps but I did see low 80's on the horizon even though my body is quite ready for 60's, sweatshirts and fuzzy socks.  But I know at least one or two Indian summers or whatever people younger than me in the PC realm call Satan bursts await in October.  I am happy to say I was able to get into the basement Friday and that pic from Friday's post is actually a reality on top!  It still looks like steaming garbage on the floor but I do what I can.   Saturday we decided to drive and find a Town de la Podunk and see what we could get into.  When we arrived at said place, we had a swing and a miss for an old fashioned donut shop.  For the love of God, they are not dinner rolls dunked in DQ chocolate dip cone sauce....

Morning Oatmeal Breakfast Cookies

My morning oatmeal isn't your typical bland bowl of oats.  Most times I like to fancy it up a bit.  I always add bananas but sometimes I'll add Biscoff spread or mini chocolate chips or if I'm feeling sassy, both.

These babies were inspired by the sassy days...



Morning Oatmeal Breakfast Cookies
(Makes 34)



3/4 cup all purpose flour
1/2 tsp baking soda
1 1/2 cups oats (regular or quick cook)
1 medium ripe banana, mashed (no lumps)
1 tsp vanilla extract or paste
1/2 cup sugar
1/4 cup Trader Joe's organic maple sugar
1/4 cup brown sugar
1 stick Blue Bonnet margarine, softened
6 tbsp Biscoff Crunchy Spread
1/2 cup Nestle mini chocolate chips

Preheat oven to 350, grease cookie sheets with cooking spray or use silpats.

Combine butter and sugars until fluffy.


Add vanilla, banana, Biscoff spread and chips.


Blend until combined.




Add flour, baking soda and oats and mix well.


Chill dough for 15 minutes.


Drop by rounded tablespoon on the cookie sheet about 2" apart.


Bake for 8-10 minutes.


Cool for 5-7 minutes on the cookie sheet before transferring to a cooling rack.

See that glossy sheen?  That's what you want.  Yum!


Now obviously you can't substitute these for a bowl of oatmeal calorie wise but they'll make one heck of an addition to your Fall/Winter baking rotation!

  1. Those look yummy. I always love your cookie recipes.

    At school they serve "breakfast cookies" every so often. My best guess would be about 300-400 calories each, but so yummy. Oatmeal based, molasses, always some kind of fruit, chewey, warm deliciousness. I always like breakfast cookie day.

  5. Those look good!! My kids would love them too, because like me, they LOVE biscoff spread. I am going to have to make these, and I love that they are less than 90 calories per cookie! Awesome!!

  7. You know, I do not like oatmeal itself, like in the "breakfast state", but I absolutely love oatmeal cookies. Your recipe is one I'd be willing to try because the outcome is just beautiful. I could practically taste these through the screen!
