Non Scale Victories This Week

During last night's LIIFT 4 Shoulders workout, I saw an improvement over last weeks shoulder presses.  I was unable to do the 2nd and 3rd sets last week overhead after about 3-4 presses.  My left shoulder would literally fall like I'd lost all muscle control with 10 lb weights.  Yesterday I used the same 10 lbs and it wasn't until the 7th rep on the second set that I started to feel bad fatigue but pushed through.  On the third set my shoulders were shot but I was still able to push overhead even if slower.  I pushed to fatigue but didn't have that dangerous muscle drop I had before. The zinnias I grew from seed are mostly in full bloom and I took some pics before cutting some to put in a little vase. Cinnamon Almond Fudge

I'm feeling very lazy tonight so there won't be step by step pics because...well, I'm lazy.  Plus this is so easy, you don't really need them.  Need a little motivation?

Here's what you'll need.
1 bag of Hershey's Cinnamon Chips
1 can Eagle Borden Fat Free Sweetened Condensed Milk
1/4 cup Trader Joe's Cinnamon Almonds, crushed

In an 8x8 glass dish, line with parchment or wax paper.  (I'll put a super light mist of cooking spray on the sides so it pops out easily.)  Put the almonds in a blender or processor for a few quick pulses so they're just broken up.  You could also put them in a zip top bag and take the rolling pin to them.  Get a big ol' microwave safe bowl and dump the cinnamon chips in it.  (Like my fancy terms?)  Then pour the sweetened condensed milk on top of it except for about an ounce of it.  (Basically don't scrape the sides of the can.)  Put it in the microwave for 2 minutes.  Stir it and if the chips aren't melting, microwave for 20 seconds at a time NOT exceeding 3 minutes total.  If the chips are being stubborn, it's okay, they'll melt.

Pour the mixture into the glass dish, smooth out with a spatula and top with the crushed almonds.  Cover it with foil and give it a minimum of 2-3 hours to set up before cutting it into 36 pieces.  You might have a few scraps left.  How tragic.  I'm sure you'll find a way to dispose of them!

They were a BIG hit at The Mr.'s work.  I plan to make it again but using macadamia nuts.

  2. I SO WISH they sold cinnamon chips here.

    I looked everywhere for them last year when I was baking about 10000 cookies for our wedding favors.. no luck. :(

  3. I never knew that Hersheys made Cinnamon Chips. I'll have to look for them here or check out on-line if all else fails. I can see a bunch of possibilities... Those really look fantastic & just WOW! My mouth is watering, I have to go print the recipe - now! ;)

  4. I've never noticed cinnamon chips before...I'm gonna hafta hunt for them. This recipe sounds oh so dangerous though :). I'll have to do the ol' eat one and send the rest to an unsuspecting friend thing :).

  5. Ohhh, YUM! I haven't seen cinnamon chips around here either, gonna have to go looking for 'em. BTW, I took your dark chocolate peanut butter crunch fudge recipe and made my own version last night based on a family recipe for fudge. Can I just say WOW! That is some dangerously delicious stuff! Don't know whether to bless you or curse you for posting the recipe. :D
