What I'm Reading This Week #28

Hello and Happy Friday my beautiful peeps!  Well, I guess I'm glad we did the tree last weekend because just as we were getting ready to leave Monday for a nursery field trip, the HOA maintenance dude shows up- no call, no email, just hoping we were home with no real knowledge of what needed to be done.  He chatted with the Mr, did a few caulks and took pics to get it submitted for siding replacement.  After that we got on the road to go to this big nursery.  Am I the only one that sweats off their sunscreen in sheets??  I swear I probably looked like I was having a stroke to passersby.  So I bought some powder sunscreen for our faces hoping that will help.  I was bummed this one great powder foundation I used years ago isn't around anymore since it had built in spf so I hope this stuff is comparable. Did a lot of stuff in the garden and it cracks me up how such a small space can take up so much of my time when I have chores to do.  The Mr's ban...

Chicken Pot Pie

I love comfort food, especially this time of year.  The air gets a chill, you put on a pair of fuzzy socks, a sweatshirt and jeans and just want some comfort food to put in your tummy.  It can be hard to find a decent meal to fall under the term "comfort food" and still be considered healthy.  Even if the calories are low, the sodium can be ridiculous.  Not this time.  I dove head first into chicken pot pie and was pleased with the results.


Now I will tell you that this does taste like a low sodium pot pie but I'm a firm believer in starting with the lowest salt content possible and each person can add table salt as necessary to taste.  I was good with the recipe as is, the Mr preferred a dash of salt.  Regardless, we both really loved it and the innards of the "pie" aren't just great as a pot pie but also ladled over rice or quinoa for a hearty dinner.  It's a highly customizable recipe where you can swap out the veggies of your choice, just remember the nutritional info will change.  This does freeze well so just ladle out what you need and freeze the "guts" for another time.  (I probably shouldn't use the word "guts" to refer to a recipe I'm trying to convince you to try, eh?)

  2. Yes it does! I updated the post thanks to you. It was late when I typed it up. LOL You can freeze them in pre-measured servings for an easy comfort food treat in minutes!

  5. haha-"guts"--works as good as anything, I knew what you were referencing :). I love me some good chicken pot pie and my kids even love when I make it (granted one of them picks out only the pieces she wants to eat, but the upside is that is usually the carrots-lol) and it is a meal that does get some vegis into them. I'll have to give this healthier version a try-thanks :).

  8. Yum I love a good Chicken Pot Pie and I like how you give each person the option of adding salt themselves.

    Unfortunately it's just turned summer here so it's all BBQs but I have filed this away for when winter rolls around again. Thanks for sharing
