Tri-Color Potato Salad

The holiday weekend is approaching y'all.  There's a staple in every picnic or family get together when grilling season begins and that's potato salad.  There are many ways to dress up a potato salad but what if you like a good old fashioned, traditional taste but still want to jazz it up?




Use a bag of tri-colored potatoes!  You can usually find a bag of "sunrise medley" potatoes on an end at your local big box grocery store.  Here's what you'll need for this lighter version of a traditional potato salad:

1 bag Sunrise Medley tri-colored potatoes
3/4 cup Miracle Whip Light (yes, you can use Light Mayo or Vegenaise)
1 tbsp mild yellow mustard
1/2 cup red pepper, diced
1/2 cup onion, diced
1/2 stalk celery, diced
Salt free spices (I used rosemary, basil, paprika, garlic powder and black pepper)
1/2 cup scallions (1/4 to mix in and 1/4 to garnish)

Here are those loverly tri-colored potatoes.


Cut each potato in half.  They're small enough that each potato is bite sized.  How cute and festive is that purple potato?!


All cut up and ready to roll...


Well ready to go into a pot of water at a rolling boil.  Cook them for about 13-15 minutes.


I let Mr. Tiki corn cob holder tell me when they're "fork tender" so that a fork doesn't break apart my test piece.


When they're ready, put the potatoes in an ice bath to stop the cooking process so the potatoes don't get mushy.


In a small bowl, add the Miracle Whip and mustard and mix together.


It should look a loverly pale yellow when it's well combined.


In a larger bowl, add the potatoes, mayo/mustard combo, celery, red peppers and onion.




Add your spices.  I used rosemary, black pepper, paprika, basil and garlic powder.


Add your scallions.


Combine until each bite is coated in this loveliness, sprinkle a little more scallions on top for a garnish.


Dig in!

  2. Another great way to lighten it up is to do half mayo and half sour cream, light of course. It works for chicken salad too.

  3. That looks great! I love the tri color packs...but my hubby refuses to eat the purple potatoes....he says that they don't look "natural" lol.

  4. Looks delicious. I made potato salad at Easter, and after my family had all gone home, I realized I forgot to put it out for dinner. OOPS! A mind is a terrible thing to lose! So hubby & I had leftovers in our lunches all week. I try to save potato salad for special times, potatoes are NOT horrible--and I have eaten them right along--but they are also pretty high in calories. I LOVE light mayo, use it all the time as does the rest of the family. We can't tell any difference at all.

  6. I just realized that it's a long weekend today--I love it when they creep up unexpectedly like that! I'm all about those purple potatoes lately. Would it ruin the recipe if I used only those instead? ;)

  7. Very pretty, and nice way to lighten it up! I'm not a potato salad fan (now mac salad, that's another matter), but my husband is. Maybe I'll surprise him with a mini version of this for the holiday weekend!

  8. This looks really good and sooo very pretty! As you know, we eat with our eyes before our mouth even touches the food! I'm not a huge potato person, but my husband would love this. If I may make a suggestion, I would add extra veggies to stretch the recipe with more nutrition. I generally will put in double the amount of veggies most recipes call for. Helps fill you up without the extra carbs. Usually this can be accomplished without making extra dressing as the dressing amount is usually more than ample.

  9. Thanks everybody! This is the Mr's favorite potato salad and since I'm not big on salads (potato, macaroni, pasta) I make it just for him.

    The great thing about all recipes is they're adaptable to your preferences so for those giving tips, change it up on your end and have fun this weekend/summer!

  10. Haven't had lunch yet, how's about just passing a bowl on over :). Love the multi-colored potatoes and the lighter version. My MIL's DISH (you know every MIL has one..the dish you couldn't possibly ever do better) is potato salad, so I NEVER make potato salad....thinking I'll be changing that in the near future.

  13. That sounds really yummy. I don't remember ever seeing those tiny colorful potatoes, but I can't say that I've ever looked either. I will definitely be looking next time I shop.
