Howdy y'all!  Does everyone else remember going back to school around this time when you were a kid?  These days?  They've been in school for 2 weeks already!!  A friend of ours has a third grader and posted the obligatory list o' facts pic their first day of school two weeks ago and I said I was so glad they didn't send us back that early and he heartily agreed! Saturday was off to a low key start but waiting for a small weight rack to replace the mondo one we had down there.  They were dragging their feet so I watered the plants front and back and we went out for a little bit then drove through the old hood.  We drove past my high school besties house as well as ours.  This is the second time we've gone there to reminisce and within 30-60 seconds people roll up on us like they notified the po po of the new car in the court.  Lord forbid I look at my childhood apartment for a few minutes so we left since it didn't feel safe.  There's nothing...

Mediterranean Orzo Recipe

Mediterranean Orzo with Gardein Chick'n Scallopini

6 oz Orzo pasta
2 tbsp Extra Virgin Olive Oil
1 small head garlic
Black Pepper
Basil (fresh or dried)
Meyer Lemon
Fresh parmesan

Set oven to 400, cut the top off of head of garlic, wrap tightly in foil and roast for 45 minutes.  (You can do this earlier in the day)  Bring a saucepan half full of water to a boil and add orzo.  Cook for 9-10 minutes.  Strain pasta, add olive oil, roasted garlic, basil and black pepper.  Stir and allow to sit on simmer for about 3 minutes to let the flavors marry.  Serve and squeeze half a Meyer Lemon over the top of each serving.  (Cut side up to keep seeds in the lemon half)  Sprinkle 1 tbsp of shaved parmesan on the orzo and top with protein of your choice.  Pictured is a Gardein Chick'n Scallopini filet which was so so until it was cut up into strips and mixed in with the orzo which the hubby loved.  Serves 2.

I will update this recipe/nutritional info when I try it with Whole Wheat Orzo.
