What I'm Reading This Week #34
Hello you sassy beast! Ready for another flip flappin' fantastic weekend? Yes indeedy, Ally Sheedy. It's been a week of working ahead for me as I try to work on ideas for holiday posts. I know, no one is ready for Christmas but spit balling stuff is actually getting me excited for the season. I like to try to give myself the month of December off from writing new posts (except updating weekly happenings) so all I have to do is respond if needed. It lets me take a little mental break during the holidays to try to enjoy what I can then hop back into the new year hopefully rested and ready to roll. We did book our 30th anniversary trip, which is the same one we had to cancel this year and of course got travel insurance. It's just nice to have something to hopefully look forward to and it makes you go "where the heck did 4 1/2 years go?" because it seems like just yesterday we were celebrating our 25th. Do people even celebrate their 30t...
I was never too fond of corn as a kid. My family would eat corn on the cob and I would always skip it and one of my brothers would gladly eat my share. If only I had known then just how good it could actually be. The herb butter takes that up yet another notch. Who needs salt?!
ReplyDeleteYeah I remember when I made that for a family cookout here once and my uncle raved about the corn. Just think if I'd known about the herb butter then? :)

Trader Joe's carries a brand called Balade I think. The tub is pretty small but I guess it encourages us not to eat too much of it. ;)

Corn on the cob might be my favorite food. We eat it repeatedly all summer--hubby is even growing some in our garden this year. But, until our corn is ripe, I am buying it now from the grocery store and hope it is soon available from the produce markets that will be springing up on the corners any day now. I have discovered, after years of slathering up my corn with real butter, that it tastes just fine with a few sprays of "I Can't Believe It's Not Butter." Your recipe sounds great, I may have to try that.
ReplyDeleteOur farmers markets have just started getting it in and looking forward to grilling some up this weekend. We've got that spray but I rarely use it. For 25 calories, I'll use the real stuff and do a few more minutes of cardio. ;)
DeleteYum!! my summer fav..growing up in India..the vendors at the beach would grill them on pieces of hot coal in a metal pan. they wud take a half lemon and dip it in a mixture of salt and chilli powder and rub it in on the cob...so good, u dont even need butter:P....

DeleteI love corn on the cob too. So good. I love to add cilantro to it, or anything really. Most of the time if the corn is sweet enough I just eat it without anything. I'm not big on grilling but everything just tastes better that way in the summer.

DeleteOh Gawd I love corn! That looks scrum-diddly-umptious! I like my corn with avocado and cherry tomatoes! I've got to try the herb butter idea..it screams SUMMAH... BUTTAH SUMMAH!

DeleteI think I've mentioned it before but my favorite all-time topping to baked potatoes is cottage cheese and chives from my garden....yowza!!! I just did a little somethin' somethin' to our corn this weekend of butter with a tiny pinch of chili powder...yum! I'll also add a wee bit of Cholula sauce as well to give it some kick.

ReplyDeleteI love to grill peppers and asparagus on the BBQ and then make a cold salad with it. So yummy.
