These babies are so cute and crunchy and because there's no chocolate, technically not a s'more. (But I certainly wouldn't want to discourage such a practice if you feel so inclined.)
Here's what you'll need.
Gingerbread Sammies
(Makes 12)
12 sheets low fat cinnamon graham crackers
12 Gingerbread man Peeps
1/4 cup white candy coating, melted
Sprinkles
Break your sheet of graham cracker in half and place one on a microwave safe dish and place a peep on top.
Microwave for 6 seconds. Yes, 6. You want him to gain weight not explode.
Place the other graham cracker on top and press slightly. When you're done microwaving them all, place them in the fridge for about 5 minutes to set.
Place them on a wire rack over a cookie sheet. This is gonna get messy! (aka- the fun part)
With a fork, dip it into your melted candy coating and drizzle/flick/go buck wild over the top of the graham crackers.
While the coating is still wet, add your sprinkles to the top and you're basically done!
If you want to give them away as favors or to wrap for school lunches, cut a little square of wax paper to place over the dried coating so it doesn't stick.
You can use decorative cling wrap or Press and Seal as I've used here with some pretty bakers twine.
Or with the press and seal you can twist the ends so they look like big ol' pieces of candy.
Or you could just grab one straight off of a pretty platter and dig in!

I don't think I've ever seen gingerbread peeps. I'll have to look this weekend.
ReplyDeleteIf you have trouble finding them, Jet Puffed also carries smaller gingerbread marshmallows that are super cute (and tasty!). You could like 3 of them up on the graham cracker for the same effect.
DeleteInteresting!! I might just make them with the marshmallows and add chocolate coating for a more "grownup" feel...hehehe...I never heard of gingerbread peeps...
ReplyDeleteYou can do all kinds of awesome combos! They have gingerbread marshmallows (Jet Puffed) and those work just as well.
