This recipe for the Seven Layer Bars was a favorite not only for you guys last year but also for the Mr's co-workers. It also turned my previous nose wrinkling at the mere thought of them as a kid to a smile of approval at their deliciousness but I lamented their higher calorie content for such a small bar. I did a little tweaking and made the portion smaller so it could easily be fit into calories and got these lil beauties.
The first bite or two is always the best and this will satisfy that craving...well as long as you don't start poppin' em like they're calorie free. ;-) Let's get started!
Seven Layer Truffles
(Makes 47)
1/2 cup butter, melted
8 graham cracker sheets broken down into crumbs
3/4 cup butterscotch chips
1/3 cup Reese peanut butter chips
1 cup toll house dark chocolate chips
1 cup chopped peanuts
1 can fat free sweetened condensed milk
5 oz bag coconut flakes (you'll have some left over)
Preheat the oven to 350 degrees.
Pour the melted butter into a 13x9 pan
Press the graham crackers down into the bottom.
Sprinkle on the chopped nuts.
Sprinkle on the butterscotch and peanut butter chips.
Sprinkle on the chocolate chips.
Drizzle on the condensed milk.
Ready to go! Put it in the oven for 25 minutes to bake.
Time to toast the coconut.
Spray a skillet with cooking spray and over medium heat continuously stir the coconut so it doesn't burn. You want kind of a "salt and pepper" look to the coloring. It will start smoking and that's when you immediately pull it off the heat and transfer it onto a cookie sheet to cool.
Here's what your concoction will look like when it's all baked up. Let this cool for at LEAST 15 minutes otherwise you will basically be handling molten lava and you will burn yourself! I highly recommend using food handling gloves or put sandwich bags over your hands.
Grab the small cookie scoop and scoop it out and roll it into a ball.
Drop it into the toasted coconut.
Roll it into the coconut to coat. Don't go crazy with it but just enough to cover them.
Line them up on wax paper to cool down completely.
These are best when served the same day but can last a day or two in an airtight container...if they last that long.

It was soooo hard to watch my co-workers eat these up knowing just how amazingly yummy they are. I don't even like coconut that much but it works really well with everything else in there and the whole thing is just wonderful melt in your mouth goodness. MMMMMMMMMMMMM.
