It really wasn't worth the effort, so now when we have creme brulee (which isn't as often as it used to be), we have it sans the torched sugar topping. The recipe I have calls for egg yolks, sugar and half & half, that's about it. Amazing how good it tastes though. Have you tried that low- fat or is it non-fat half & half? I haven't tried it yet, but wonder how it would be in creme brulee? Perhaps substitute Splenda for the sugar and use egg substitute?
