What I'm Reading This Week #36

How do, all! Here's a quick recap of what we've been shoving into our cake holes this week.

Monday was our official cook together day and it came together quickly.  Lobster ravioli with lemon sauce and sauteed haricot verts.


Tuesday I made a Brussels sprout flatbread I had my eye on.


It was insanely good and I think even the Mr was surprised because when I originally mentioned it, I felt judged.

For my birthday dinner, we cooked together again and did a steak au poivre with shallot sauce, chipotle honey sweet potato and blistered sugar snap peas.


Neither of us could stop smiling through every friggin' bite.  Amazing.  He said he felt like it was his birthday.  

Last night was Mexican cheesy chicken rice.


I've been taking a drink of water after every bite and that one had me floating with the rice.  It was good though.  

It's finally Friday and a long weekend for many.  I will take that even if it's really no different than other weekends these days.  I am ready for the unofficial close of summer!!  

For those tempted to poop on us Fall fanatics by saying "we've still got about 3 weeks left of summer, so pipe down pumpkin butt!"  I will remind those Summer folk they were kicking off the season on Memorial Day weekend which is more than 3 weeks before the official start of summer so...

Bring on all of the Fall things!  (Except pumpkin spice everything.  That's just annoying.  Save it for the pumpkin pie.)

No real plans for the weekend that I know of.  Might be nice to get out of the house though.  I'll see what I can get us into.

  1. We have had some amazing dinners this week. But what people should also know is we fit those into calorie ranges that are still allowing us to lose weight. Totally worth restricting a bit in one place in order to get a meal like those, trust me! I definitely need some time out of the house this weekend too. Not sure where or how but due for a small road trip for sure.

  2. The hubs worked for an hour this morning before being sent home so he technically now has a 4-day weekend now so I'm very happy for him. I have to work all weekend, so today is more decluttering and gathering things for donations and running a few errands. We're supposed to be in the 60s next week so I'm looking forward to that. Have a great weekend!
